Massoud, a baker from Ramlieh who was one of the first participants in Souk el Tayeb, was one of several farmers and producers who told their story Thursday at the initiative's 15th anniversary festivities at Beit El Hamra, a Souk el Tayeb guesthouse-restaurant.The souk now gathers about 100 small-scale producers from all over Lebanon every Wednesday in Clemenceau and every Saturday at the Beirut Souks.In 2009, Souk el Tayeb went on to begin its restaurant initiative, Tawlet, described as the farmers kitchen.Like Souk el Tayeb, Tawlet has expanded and now has six outlets over the country that aim to showcase traditional Lebanese cuisine cooked by the women who have carried their grandmother's secrets down through generations.When asked about Souk el Tayeb and Tawlet's future aspirations, Mouzawak said he hoped the idea he had created would spread to others.
